We acquired the raw beef preparation and selling business license
from Minato-ku, Tokyo public health center on April 7th 2014 We only make purchases of raw beef from specialty raw meat wholesalers. Under the public health center regulations, the surface of the beef is cooked up to 1 centimeter deep at a temperature of 60 degrees for two minutes to kill bacteria before cutting the raw meat from inside. The beef is prepared this way, thus making it safe to eat. But children, seniors, and those who are vulnerable to food poisoning are suggested to refrain from eating raw beef.
